Baked Sweet Potatoes

Serves 8
  • 3 C evaporated skim milk
  • 1 C apple cider
  • 2 bay leaves
  • 4 medium sweet potatoes, peeled and thinly sliced
  • 1/2 t salt
  • 1/4 t freshly ground black pepper
  • 1/4 t ground nutmeg
  • 1/4 t ground cinnamon
  • 1 T unsalted margarine, cut into small pieces

  1. Preheat oven to 350 F. Spray a 2-quart baking dish with vegetable cooking spray.
  2. In a large saucepan, combine milk, cider, and bay leaves. Bring mixture to a boil over medium-high heat.,stirring occasionally. Add sweet potatoes, salt, pepper, nutmeg, and cinnamon. Cook, stirring occasionally, until potatoes are just tender, about 10 minutes. Remove bay leaves.
  3. Pour sweet potato mixture into prepared baking dish. Dot top with margarine.
  4. Bake until sweet potatoes are tender and golden, about 40 minutes. Serve immediately
