- Preheat oven to 350 F. Spray a 2-quart baking dish with vegetable cooking spray.
- In a large saucepan, combine milk, cider, and bay leaves. Bring mixture to a boil over medium-high heat.,stirring occasionally. Add sweet potatoes, salt, pepper, nutmeg, and cinnamon. Cook, stirring occasionally, until potatoes are just tender, about 10 minutes. Remove bay leaves.
- Pour sweet potato mixture into prepared baking dish. Dot top with margarine.
- Bake until sweet potatoes are tender and golden, about 40 minutes. Serve immediately
