- Wash greens and pat dry with paper towels; coarsely chop greens. Set greens aside.
- Place pork, chile, sugar and water in a large Dutch oven; bring to a boil. Reduce heat, cover Dutch oven and simmer ingredients for 20 minutes.
- Discard chile.
- Add greens and salt. Cover Dutch oven again, and cook and stir over medium until greens are tender, about 10 minutes.
- Discard pork before serving.
