Turnip Greens

SERVES 6
  • 1 pound trimmed, chopped turnip greens
  • 1 (4-ounc) piece salt pork, cut into 4 pieces
  • 1 dried red chile
  • 1 teaspoon sugar
  • 2 cups water
  • ¼ teaspoon salt

  1. Wash greens and pat dry with paper towels; coarsely chop greens. Set greens aside.
  2. Place pork, chile, sugar and water in a large Dutch oven; bring to a boil. Reduce heat, cover Dutch oven and simmer ingredients for 20 minutes.
  3. Discard chile.
  4. Add greens and salt. Cover Dutch oven again, and cook and stir over medium until greens are tender, about 10 minutes.
  5. Discard pork before serving.
