Easy Key Lime Pie

Makes 1 (9in.) pie
  • 1 ¼ cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated white sugar
  • 3 large egg yolks
  • 1 (14 ounce) can sweetened condensed milk
  • 2 teaspoons grated lime zest
  • ½ cup key lime juice

  1. Make sure oven rack is in the center of the oven. Preheat oven to 350 degrees F.
  2. In a bowl, combine graham cracker crumbs, melted butter and sugar; press into the bottom and up the sides of a well-greased 9-inch pie pan. Cover crust with plastic wrap then place in the refrigerator while you prepare the filling.
  3. Place egg yolks in the bowl of an electric mixer and with the whisk attachment, beat the yolks for about 3 minutes, until fluffy. Slowly add the condensed milk and beat for about 5 minutes, until mixture is fluffy and light. Scrape down sides of bowl then beat in lime zest and juice. Pour filling into crust then bake until filling is set, about 10 minutes. Remove pie from oven then place on a wire rack to cool. Once cooled, cover pie then refrigerate until serving time. Before serving, if desired, top with whipping cream.
